It's Friday, and that's all I've got.

Happy Friday!

So...yesterday I had a nice snowy 4 mile run in my new PureFlow 2s. They were every bit as amazing as I expected. They actually feel very similar to the old PureFlows which is good because I love the old ones. These do feel lighter, I'm not even sure how that's possible. Anyway, they are a great success.

I didn't wear my YakTrax for this little bit of snow and I was fine. It was a little icy in spots but not too bad.

I didn't run today. I was actually going to run twice yeaterday, but my leg got a bit sore as the day went on. I've spent the day cleaning and organizing. The little girl got a ton of stuff for Christmas and we don't have a ton of space. It makes things interesting, that's for sure.

We also made Minestrone. Nothing tastes better than soup when you have a cold.

I'll share my recipe, it's nothing fancy but it's good. Also, I don't usually measure, I just taste as I go. I attempted to measure today, but I still suggest tasting as you go.

64oz Vegetable Stock
2 cans diced tomatoes
2 cans beans, I used 1 can black beans and 1 can white/northern beans
1 can corn
1 medium onion, chopped
2 or 3 medium carrots, chopped
3 cloves garlic, minced
8oz pasta, I use small shells
1 tsp dried oregano
1 tsp dried basil
salt and pepper to taste

Sautee onion, carrots and garlic in a large pot until carrots are softened
Add basil, oregano, and pepper, cook for another minute
Add tomatoes, stock, beans, and corn, bring to a boil
Add cooked pasta, bring back to a boil

There you go, now you have enough soup to feed an army of sickies. Enjoy.

  1. And just think she soon will have even more, as she turns 3 in just 4 days! Is she counting down yet?
